
The Castle Hotel
A 28 bedroomed hotel in Conwy, North Wales, the Castle Hotel is an historic coaching inn with a fascinating history, having been host to such eminent people as Thomas Telford, George Stevenson, William Wordsworth and the Queen of Romania, who took lunch at the hotel during a visit to the area.
Graham is chef director and partner at the hotel with Peter Lavin. Like Graham, Peter has a great belief that good food is one of the main keys to a hotel's success. Under their leadership, the hotel's reputation has gone from strength to strength and Graham's influence in producing an imaginative menu making best use of fresh local produce has helped greatly in developing the restaurant into one of the region's best.
The hotel was highly commended in 2001 and 2002 for Cheshire Life Small Welsh Hotel of the Year and was awarded the AA’s Best Welsh Hotel in 2005-6.
